Nothing, current HoloWorld is just a new world, not a completely new server, so old stuff still exist. Think of current server as yet another resource server but with EN / ID / JP playing at the same time (rip latency though)

Original JP server was Crafting-type while second JP server (and every other Holo server that followed after that, outside of special cases like latest JP Sports Fes) was Survival-type
I don't recall the exact reason why management did it, but it happened shortly after 3rd gen's debut, so maybe it was done in order to make things more interesting.

the old server is well...old so to make it load any of the new blocks that came with updates they would need to travel to parts of the map that no one explored yet. which would easily be a 30+ min journey if not longer since they explored a lot, especially when they got elytras

Flattening the ground in a localized area to make a building out in the middle of nowhere is not the same as entering the server and leveling absolutely everything within eyesight until the entire server is a flat city.

I didn't realize that's all their first server was. The current server is in no danger, the original server is the one that's gone but a lot of Hololive's history from that period is also gone. So it's not seen as a big deal I guess in the relative sense. I do wish it still existed as another world in the current server but I'm not sure why exactly that wouldn't be possible.

The first JP server still exist but it's unlinked and IIRC Shuba is the one who keeps it alive by logging in every month so that server won't disappear - I think last summer Miko did a stream where she revisited first JP server and she mentioned all that.

I think it's more like Creative server fits people who just want to build stuff and not deal with farming or combat (people like Sora), but with all the potential Hololive had back then in terms of interactions and collabs (again, I'm pretty sure Gen 3 was just revealed not too long before server swap) it was probably for the better to swap to Survival server.

In all the time I've played Minecraft I have never felt the need to level a mountain to build a house. If there's a hill there the building should incorporate the hill or be made elsewhere. I don't know if it's a female thing or a Japanese thing but needing the ground to be completely uniform before building isn't normal.

If there was a problem with the JP server, it was not flatness but that everything was so localized (you can't even see the "flatness" with all the massive structures). And yet that's the most unique thing about their server, that it hosts an entire city. The reason the other servers don't look like that is they don't even have enough people to fill out a server so everyone is just off on their own somewhere. Watame did say she was going to make an underwater home in this new world but even for stuff like that you can see streams of all the secret homes people like Flare have made and because they are hidden, no one sees them. If you are making something you want interacted with, you want to make it next to everything else. If you just want to do your own solo game in a shared server and hope everyone else avoids you, you do what Kronii did and then burnout on the game before you've done anything and never ultimately have fun.

This is a matter of people not understanding language (including Holos). The very first stream that was shown of this is the one that got it correct, 新ホロ鯖ワールド. There is no new server. Nothing has been destroyed or lost. Anyone who watched a single stream would not be confused over this issue and yet you see people in live comments on streams bitching about it. All the girls are constantly disconnecting and reconnecting when others want to sleep and you can see there's only one server, the same one they've always had. And when all of them start their streams, they are in their old homes in the JP or ID or EN worlds and then they take whatever things they want, leaving most behind, and go through the portal into this new world which has three portals side-by-side to EN, ID and JP.
