The Office Lady is one of the most powerful archetypes in all anime, the aesthetics are absolute top tier with staples like pencil skirts, tights, business shirts, ties, jackets, etc and work perfectly with thicker mature figures.
They all do sort of look very similar to each other because the entire archetype is based on a certain look made of a few clothing combinations.
So making an office lady stand out is kinda challenging actually.
I think Coffee works perfectly for it, it's bitter, it's a classic office drink.
Finding a girl to fill those shoes won't be easy tho.
Pill is basically just "cute young girl" and Nori is just "cute young girl, but neet themed". Plenty of young girls online and even neet femanons.
But office ladies are a rarer breed. There are some for sure like Airi from Phase Connect or Pomu from Nijisanji before she quit that job.
I don't think the girl playing the character needs to be an office lady tho. And she doesn't need to roleplay as one, not any more than Marie roleplays as an oujo.
But she should at least match the character a little. You can't give a hyperactive little zoomer girl a character like this. It doesn't work that well.
You can give loli models to hags and you get a lolibaba but a young older lady is just weird.
Personality wise anything can fit, sorta. No rule says an office lady has to be the mature cool older lady archetype, she can be high energy too and it might even fit the Coffee theme as well.
In terms of expressions and the "Feel" of the character I think it should be adapted to whoever wants to play her and not the other way around.
But should still be able to play the office lady in general, which means she at least needs to feel old enough to have her own job.
Immature older women are an archetype too so it's not that hard to find a girl that fits. I think age is the only factor.
Find a girl in the late 20's or even better if she's in her 30's and she'll be good enough.
I'd love to provide references for an office lady outfit, just consider them potential sources of inspiration nothing more.

Almost every office lady design goes for a pencil skirt, this is the norm so it's the base.
What really sets most office ladies apart is their top.
First of all you need to ask, with blazer or without blazer?
Pencil skirt + blazer is one of the most standard office lady designs.
Then you have to decide what sort of shirt goes underneath and how the top is open, you can go for something sexy like an open blazer with an open shirt and a visible bra. Or you can go for a conservative closed shirt closed blazer look.
There are a few options for the neck of the shirt itself but that's about it.

What if you go for no blazer?
The most basic option then is just a plain shirt, often it's white but it can really be any color. It can even have stripes as well. It can be closed entirely or open and even showing the bra as well. Or it can be a little see through and show the shadow of the bra under the white shirt.
Another option is a sweater shirt with a softer fabric.
The shirt can actually be either long sleeves, short sleeves or even no sleeve at all.

Some office lady accessories include ties, including ribbon style ties and corporate name tags.
Belts are also an option, those can be worn at the hips or the waist and there are thick belts and thin belts.

What about the legs? Well you can go for tights and pantyhose, that's a classic. But thigh highs are also acceptable, or even regular short socks as well.

Generally office ladies use office shoes but heels are also optional.


Now for my design proposal:
If you're going for a "coffee" theme I would recommend a black pencil skirt, no blazer, a brown top, brown tights or thigh highs, you can even throw a garterbelt and black shoes.
I'd give her brown hair to match the Coffee theme but I might give her something black to on her neck to break the brown from the shirt, like a neck tie or a ribbon or even a choker.

Yeah the data is just really biased. Still, I did a few more generations and this one came out really nice. It could still use some fixing, make her look a bit more tired but the outfit is good in this one. It gave her a heart belt which isn't replicable though. And I wanted to keep the sleeveless inner blouse and have the blazer be more open, but the AI really doesn't understand the tags open blazer and sleeveless blouse together, and tends to make the blazer sleeveless too.

Proompting is more like using a search engine. The AI is very basic and isn't designing anything, there are some things it won't be able to gen no matter what because of the distributions. Dress-up and character design both require intentional user input, if it's like either it's like hitting the randomize button. Only way it's different is if you trained your own and every time you download art that you want it to be like and include it.

It's not really that it became able to replicate her but that it only cared about her after a point, and only her. If you have access to the network you can always regenerate the input from the output using some techniques. You can also use explainers to explain which parts of the output are from the input tags and to what degree. So you can get a better idea of how it's genning. The downside is that training with high res images takes a lot of time and resources, but if you can do it then it's always going to be better.
