There 4 possible explanation.
1. She was too greedy. She want complete monopoly on her income and she doesn't want to share it with Anycolor. She thought her popularity as Gibara will carry over in real life. Turn out you still need connections to be a VA and by quitting Nijisanji, she essentially cut off from that connection. She must be seething when she saw Sango become a VA.
2. She become too lazy. She was part of idol unit with Warabeda Meiji who was also quit for health reason. She had fyck ton of live and she probably think it was too much and quitm
3. She probably want to stop acting like a gorilla. She quit so she can start from zero with new personality.
4. She got rejected by Inui Toko and got heart broken.

She said herself she quit because she finally had a real chance at achieving her dream which was to do va in mainstream anime. Probably passed some auditions and was told she'd being doing recordings and stuff but was immediately canned when they realized she was from Niji or when a seiyuu with better brand and name recognition agreed to do the part. A lot of studios and production companies do that especially when you're new to the industry, they'll promise one role or job to multiple people then just fire or ghost everyone if someone better comes along. She should've just applied for Hololive or Tamaki's company, vtubing is all she's good for now.
