I've done live translation before and that shit takes so much focus it's unbelievable. If you miss what is said for one second it's already over. Instantly knowing the correct translation for everything without having any time to think is one difficulty, but it's also just having to actually memorize what is being said until it's her turn to translate that would be impossible for me.

It's completely normal when you're first learning the foundations of a language to translate it into your native language first. Immersion doesn't actually work that well unless you're given references, usually visual via text or image, since if you have no point of reference, immersion is useless. However, language acquisition only begins when you have enough vocabulary and grammatical rules while being familiar enough with the basics to start thinking in the target language, which is where immersion will do you much better than targeted learning.

I can't honestly comprehend it, but it may have something to do with the fact that she was on a Working Holiday Visa and Mori wasn't (she was almost certainly on a Humanities visa, as her "scythe-swinging lessons" sounded like eikawa work rather than Instructor).

Either she couldn't accept a visa from COVER due to convoluted IRL reasons or there's something about her background that makes her ineligible. I have difficulty believing COVER couldn't do it for her, though, as it really doesn't require much capital, resources, or expertise on the part of an employer in Japan to sponsor someone as an employee.
