the extension author runs a server to host dislikes, so when you press dislike you send something like:
>youtube video id
>user id

and they will add +1 dislike based on youtubeId and userId to that video on their database. When another extension user uses the extension they fetch that number and render it on the screen. Basically you're looking at your own little world with no real dislike information other than from other extension users.

I tried to get around it to and did a lot of research, it doesn't work.

Anecdotal but I have a couple videos with a few hundred thousand views each, just some tv show and movies clips, and I compared what the extension reports vs the actual analytics and they're within single digit margins of accuracy.
These videos were uploaded back when the dislike data was public, however one of them got picked up by the YT algorithm and received a majority of it's views after the change and is still within single digits of accuracy. Pretty interesting.
