From the description of Pippa’s coffee, it seems like the beans are very “bright”, which means a bit of a sharp bite and possibly a slightly sour aftertaste. Yes, you are supposed to use a scale. A close approximation is a little under two tablespoons per cup of water, but given all this, I’m more likely to believe Pippa screwed up the brewing method and/or it’s not her style of coffee than that the coffee’s bad.
