I think it's because Twitch doesn't have waiting rooms and one's stream schedule isn't attached to anything. On YT, videos are the first-class objects, and streams are just a specific kind of video, which is part of a channel, whereas on Twitch the first-class object is the channel (vods are tacked on), so there's no hard delineation between streams.
