Don't care about either of these moments, personally. To me, the most iconic moment in Dark Souls II is reaching Vendrick. Best boss fight is Sinh. Best level is Shulva. The hub is also fantastic, great music too.

What made this series was level design, which is complete dogshit in the vast majority of Elden Ring. Boss design is a continuation of the mistakes made in Dark Souls III, and even worse in every way. In part due to them wanting to make the game more accessible with the spirit ash system. Not a single boss fight in Elden Ring is an actually unique, memorable encounter, it's just an empty room where you react to a moveset. It's a game where every boss is Artorias without any of them being nearly as cool as the original.
There were some good fights, like Placidusax, Malenia (despite being more of a Kingdom Hearts boss than a Souls one), Rykard and Rennala, but there were far too many garbage ones, even among the main bosses, let alone the chalice dungeon shit fodder scattered throughout the world. I actually really liked the Fire Giant too, but I think even people who loved the game hate that one, so yeah, not gonna use as an example of great boss design.

DS3 is just a roll simulator. It began the issue that was taken to the extreme in Elden Ring of completely letting go of level design as part of boss design in favor of every single fight being an empty arena for you to react to a moveset. No more dealing with the environment, now what they use to catch your attention is just rollcatching. Every fight is basically the same shit with different patterns.
That's not to say that every individual fight is bad, Lothric and Friede are two I particularly really enjoy, but the roster as a whole is really brought down by the lack of unique encounters for the bosses. They're all either simple skill checks or shitty gimmicks. Sekiro at least had good gimmicks, and Elden Ring too, for its credit, with Rykard and Rennala, but Deacons of the Deep and Crystal Sage are such nothing fights. They should have scrapped the actual Crystal Sage boss fight and had the one you chase in the Grand Archives have a boss health bar on screen for the whole level, that would be SO much better.
