"VTuber" doesn't actually mean that the definition is the sum of "Virtual" and "Youtuber". Otherwise every single person on Youtube would be one (and only people on Youtube). It means an individual with a computer-generated, animated virtual avatar (rather than using real imagery or camera footage) who engages with the audience without revealing any of their face.

Most Twitch vtubers that people recommend here I largely don't like. They seem to be the same recurring personality motif in an attempt to replicate Senzawa (which is ironic for obvious reasons that the Jannies will ban me for if I mention).

Twitch has a streaming service that doesn't randomly shit itself and uses IRC for chat instead of whatever the fuck Youtube is using. With that said, Twitch is still fucking cancerous with their blocker-dodging ads that the streamer can't even opt out of, banning streamers left and right for no good reason, giving preferential treatment to some over others, exclusivity contracts and having rapists on the staff. If a chuuba I like switches over I'll just watch through mpv and never create an account.
