I don't feel very consistent farming gold. I can get ~6k from a 20 minute stage run as Mumei but sometimes I get RNG screwed. Doing endless doesn't seem much better, while I can eventually get more it takes so much longer it isn't worth it, and it isn't as idiot proof as just Mumei -> level 7 feathers -> elite cooking + flattening board and facerolling normal stage mode.

Beat Smol Ame for the first time with Gura, mostly no upgrades except for speed and the skill unlock. The crowd control from the whirlpools is broken when combined with all the speed she can get, and yet those shark bite marks stack damage debuffs so much that she's also one of the harder hitting characters. She's mobile enough that you can afford to stand still sometimes when the whirlpools are just right in order to pump DPS on the trapped enemies.

for regular mode not really, you have options for your sustain crutch; dakimura makes the game more forgiving, ubersheep with full meal gives big fairly consistent burger heals. Recommended to have some sustain if you're playing a character without inbuilt sustain. Even Fauna who has a lot of inbuilt healing can use nurses horn to proc her damage skills.

I think it is weaker, but it is wider. Mori can hit a 180 region with a bit of dead space, while Kiara's is more like 90 region with no dead space. Mori's at least can get an insta-kill effect.
