Tons of reasons actually. She was isolated on YouTube, as the vast majority of the western vtubing scene uses Twitch, and for good reason. Twitch as a platform is much better for discoverability thanks to an algorithm that actually works and suggests you properly to people who would be interested in your content, and it cannot be understated how important raids are to breaking the ice for networking between streamers. You also make more money per-capita, as the ability to gift subscriptions means that the bigger spenders in your audience have an outlet to contribute while feeling better than a direct lump donation, because they are supporting both the streamer and the rest of the fanbase in tandem.
YouTube is also in fast decline as a streaming platform with no fixes in sight. It lacks most of the features Twitch does while having massive downsides such as a badly delayed chat, (Twitch chat is almost instantaneous while YouTube chats can sometimes be delayed by up to 20-30 seconds) the entire page lags when you try to use emotes or the chat is too fast, connection issues, constant copyright claims that block your VODs in random countries for 30 seconds of music in a 3 hour video, the very bad algorithm that has been getting worse and worse for indies over the last few months, (look at the socialblade of almost any indie and you will see stagnation and/or decline) and the viewer "feature" suppressing your actual attendance, so you have no idea if you are actually doing well or retaining viewers because you have no clue how many viewers you truly have.
An excellent anecdote is the first Twitch stream when she had tech difficulties and had to swap to YouTube for a short bit while she ran tech support on her rig. When she was on Twitch before switching over, she had 130+ viewers. When she went to YouTube, she had around 50, and then when she fixed her setup and went live again on twitch she got up to 150+ and held it consistently for the entire stream.

Yes there is an option to mute it. You can also not place the alertbox. Nina mutes all notifications for example on her karaoke streams.

You can adjust the sound of the notifications yes, but it is important to at least have them for interactions sake. Who would donate to a streamer if there is no response to your donation? Its case by case though, as some streams you do want to turn of alerts to focus on certain kinds of content.
On the DMCA thing, what you have heard is clickbait basically. YouTube is far worse for DMCA than Twitch, as Twitch has a feature that simply mutes the part of your VOD that has the infringing music rather than outright take down the entire video. DMCAs are actually much rarer on Twitch than on YouTube, but Twitch is the big hotness so gossip rags have been writing "EVERY TWITCH STREAMER CAN GET LIFETIME BANNED FOR 10 SECONDS OF THE HALO THEME LOOK AT THIS ONE CORNER CASE EXAMPLE (also they got their account back in under 12 hours but ignore that)" articles for some time because that brings in ad revenue.

I have watched a ton of Vtuber Karaoke streams on Twitch, and I have never once seen a stream struck down or muted mid-performance. The most I have ever seen was the VOD having a song or two muted, which can be circumvented by downloading it and uploading it elsewhere.

I just don't like twitch because it's a laggy, stuttery mess for me half the time
but honestly as long as the VODs are on youtube it doesn't matter to me either way, what's better for the streamer as they're doing it live is what matters most in the long run

Yeah, at least for now it seems like the best option is streaming first on twitch and that being the primary income source, then using Youtube as more of a VoD archive.
