Milk is trivial. Dairy vs non-dairy milks are basically interchangeable.

She's actually talked about vegan egg substitutes for baking before. You can use stuff like applesauce, flax, banana, tapioca, and so on.

As for butter - you can substitute oil for butter in a lot of recipes,and if needed, you can actually make "vegan butter" by mixing oil and water and whipping it. Obviously you'd use plant-based oils for that purpose.

All of this affects the taste, naturally, but it comes up with something that can USUALLY be rightfully called the same thing (cookies, cake, ice cream, whatever). A lot of vegan recipes will try to find some combo of all the above that minimizes the difference, but the vegan version will pretty much always taste at least a bit different.

it depends on what you are using butter for and if its melted or not.
recipes that call for melted butter can be replace with and equal amount of canola, virgin olive, virgin coconut, safflower, or just plain or vegetable. It won't have the same savoriness though. and cakes will be flater as oil doesn't hold air.
avocado and olive (not virgin) can be used for frying foods as they have a high smokepoint and will impart the flavor into the food.
fruit purees can work too
