Who are some easy vtubers to draw? I want to practice with easy designs

Basically any early Niji/Holo will have a simpler design compared to more recent ones.
JK Gumi (Tsukino Mito, Shizuka Rin, Higuchi Kaede) are basically just standard anime high school girls. Same goes for Matsuri, Haachama, and Subaru in their original outfits.

Their original designs are sometimes complex/overdone but some Holos have very simple alt outfits.

Mio has some actually-ordinary ones including one that is literally just a blouse and another that's a sweater and a shirt, otherwise it's "add wolf ears and the orange slice thing in her hair" on top of however you draw an anime girl. If you can't draw Mio in her blouse or gamers outfit that's more of a you thing than the subject.

Gura is my go to. Really easy to design to simplify if you're just practising with enough details to to skill up to. The flowy hoody is fun to practice folds without going overboard like IRyS's ruffled skirt for instance. Her personality is really versatile too in how you can express it. Cutesy, gaki to edgy
