Vials are the main reason for it, you start with very few and the game encourages you to farm (do no-heal runs of just grabbing vials and dying) because they don't recover like Estus
later game when you can spend a good handful of echoes on vials since levels are too expensive and go over the cap so they start getting stocked up it becomes way less annoying

I enjoy Mori and her gameplay even if shes not the best or just awful at the game.

It's not really about open world, it's about a more dodge-focused and calculated manner of ER combat where you charge in when you have an opening and then back off. Sekiro instead wants you to attack or at least be in close contact with the enemy all the time since there's no stamina to limit your actions. The moment you ease on the pressure is the moment boss HP pretty much regenerates since for most bosses, filling their posture bar is much easier than depleting their HP. Once you realize it and learn how to keep the pressure up, it's an eureka moment and the combat becomes much more enjoyable and satisfying.
