You are kind of restricted to hand cam streams as chuuba since you also need to point a facetracker...to your face. So basically just stuff that can be done completely in a static area on a table.
If it is DIY enough for you, there are some that do stuff like knitting, some do gun cleaning and there is at least one /tg/ anon that paints his shit.
Don't think I have ever seen anyone use powertools

3D Modelling, L2D modelling, game dev, general traditional art, merch are probably the more common things I've seen.
Audio making streams as well, those are always fun. Having someone just spit out a new song is good and all, but seeing them actually create that song itself is incredibly fun, even more so when they take ideas from chat for it. Most recent example I saw of that was Haachama making some absolute shitpost of a song. Huh, did she remove it?? Shame.

replacing real hands with 3D model is possible if you use tracking gloves that don't get in the way(probably custom hardware) and greenscreen the workspace and forearms.
Then combine it with regular 3D facial tracking, but again combining these 2 would probably require custom software too
