It's not a fucking anime series with a fixed order, you can start anywhere you want.
Try searching up clips or compilations with two or three livers interacting with eachother (just search "nijisanji en clips" ad click on whatever clip has more than one character in the thumbnail) and see who you like from that, then search individual clips by liver name, then check out their streams.

NijiEN debuts are usually pretty short in the 25-30 minute range each. If you're interested in someone, then you can watch their 2.0 debuts. The 2.0 debuts are usually much better than the originals because the Liver is much less nervous and they will have much more time to explain their passions, from which you can better gauge their personality.

Elira has this fujo onee-chan gfe thing going, and it's better than it sounds. She has trash taste but she's still lovely. Known for her cozy zatsudans.

Pomu is a cave-dwelling terminal weeb shitposter. Has a lot of fun doing everything. Probably the best starting point overall.

Selen is a gamer tomboy gremlin. Good for shooting the shit with. She's not super social so you'll probably get the least exposure to her through collabs.

Rosemi: daughter. Innocent with a mischievous streak.

Nina: pretty divisive since she tends to dominate collabs and produce bountiful cringe. I haven't watched many of her individual streams but she seems to be better there and also tends to play more niche stuff not many other vtubers play.

I don't know enough about the others to really describe their content. nijiEN tends to thrive on collabs, so I'd suggest just picking a few to watch and you can quickly get an idea of what everyone's personality is like.

Nina is very good as an individual streamer and most notably generally knows shit about the games she plays and doesn't have to rely on the chat or wander around for half an hour completely unable to do basic shit in the game.
