You could already get a solid 10 to 15 minutes video by just going through the recent Cry of Fear collab. You don't have to re-watch the whole 6 hours. I used to edit best-ofs for a Twitch channel, my process was

>derush it, use the sound rubberband to skip the uninteresting part to go faster (usually more sound = more excitement, stuff you'll want to clip, you can skip all the quiet moments)
>cut all the uninteresting shit, keep the best parts (you should be down to under an hour)
>trim the excess, work on the transitions, add dynamics
>repeat until you're at 15 minutes or so
That's if you want to do a best-ofs (which nobody does for free anymore since it's so much work, I've done hundreds of hours of editing for only a few hundreds views all in all). For clips, I would just write-down timestamps while watching the stream, download with youtube-dl, do some rough trimming with ffmpeg, and do the last touches with Premiere Pro (like cutting nicely, adding some dynamics and adding the intro/outro)
For past VODs, I would simply use the chat replay to figure out the funny moments. People spamming "lol" or emotes means something clippable.

Some of the more recent ones are probably good. She had a pretty bad rig early on that chugged even for games like spooky's jump scare mansion and omori, but can now play and stream games without a problem. The Sally Face streams are pretty good and had some fun tangents, Ori was cute, the Valorant bullying was fun, the L4D2 collab was obviously amazing, watching her focus to solve puzzles in Inside was great. The birthday celebration stream was cute too, and some more bullying in Getting Over It. Also definitely watch this one
