My read is that the Nina we see on stream is her real personality, and any changes that have happened with her over the course of her streaming time have simply been her getting more comfortable being herself. If anything it's a more extreme version of herself, but not a made-up persona.
All she's talked about regarding her normal life makes her sound pretty quiet and reclusive, so streams and the internet are an outlet for venting the personality she bottles up. Schizos will assume everyone's lying to their faces or only acting, but a lot of introverted people are like this.
