I'm somewhat biased since I like JRPGs, but her interest in Nier is why I suspect the biggest issue is not just the aesthetics/graphics so much as the gameplay. Nier and Tales are both Japanese ARPGs. I feel that if a Japanese game looked like Skyrim (i.e. the LotR European fantasy look that she obviously likes) but played like the linear, story-driven games she prefers, it would probably already be on her radar. I've not played Witcher, but I've heard some people call it a Western JRPG due to being less open world and having stronger story focus, so I assume it would be a potentially okay fit based on that.
