I've made gingerbread houses with my Swiss grandparents 30 years ago and they weren't meant for eating even back then. The dough was made to not rot or break, it was fucking hard and tasted almost like nothing. We used frosting for glue but based on one or two houses falling apart over the years that may have been the wrong choice.
