I've been using MKVToolNix to add delay to the subs
The problem is ridiculously annoying:
Episode 2 - Subs are behind by about a second before the OP starts (there is new stuff going on for over a minute usually), then they become synced with the rest of the episode
Episode 3 - Subs are perfectly synced before the OP, but become about a second AHEAD after it finishes

I'm fine with individually changing the delay for each episode, but the problem is I have to go THROUGH each episode to check whether I need to add a delay or not. Thank you for infodump, I'mma try some stuff

I'm already impressed, they grow up so fast. The VLC suggestion is the equivalent of remuxing them with MKVToolnix with a fixed delay without needing to actually remux them if the subs have the same filename as the video, they will autoload in VLC/MPC-HC/MPV - anything that doesn't suck ass
Aegisub and more modern utilities like Subtitle Edit - although it may do fucky things to .ass formatting if you don't pay close enough attention can let you do more finetuned delays on specific parts - make all the subs before the OP x.xxx s earlier and all the subs after it x.xxx s later, etc.

The "Shift Times" window should be all you need. You shouldn't need to use "Start times only"/"End times only" - keep it set to both. You can ctrl/shift click e.g. all the lines before the OP to make them earlier with "Selected Rows" and then make the rest later or vice versa by picking the first line after the OP and doing "selection onwards"
Bonus autism: clicking that "Edit" button you see near the audio on the right or "Subtitle -> Style Manager" and looking at the styles in the "Current Script" box on the right half can let you know if you're missing any fonts used. .ass fansubs usually come pre-embedded in an mkv with the necessary fonts as an mkv attachment.

no worries. a few minor idiosyncracies from aegisub since it's ancient
if you open an .mkv with embedded subtitles directly, you might have to do "File -> Open subtitles from video" to actually load the subs
if you open the .ass itself and it doesn't auto-load the video it likely won't - the filename the subber was using is what it will be looking for you can manually load the video from Video -> Open video. once you save the edited .ass file, it will replace the hidden comment that was telling it to look for "name of fansubbers video file.mkv" and any further edits will auto-load your mkv

Second, make a garlic sauce with garlic, butter, parsley, and cheese I've got pecorino romano and some generic easy to melt cheese. An anon here recommended these a few threads back.
Third, put sauce on bread
