Because its a rule that no one really pays any attention to, it's very common to anthropomorphise animals and his/hers is a part of that. Even nature documentaries will try to "tell a story" and have a "mother bear" and "her" cubs or whatever. In labs or slaughterhouses, or any other place where a detachment from the animals is required, "its" is more detached than "theirs" so that gets used instead.
