Yes, she is very skilled in mixing the various vegetables and shrooms (taxonomists are still bitching about this) with the noodles. She could reduce liquid by about 15% and it would be optimal but this is still really good.

The secret is the butter, pasta water & cheese. Makes for an incredibly flavourful sauce that has an unspeakably smooth mouthfeel and doesn't taste like dairy at all, hence the confusion.
