For the rest yes there are indeed some who try, it's still incredibly rare (and often in one language) and thus there is little choice. Same with more educational content, which often works more as scripted than streams. Not saying it doesn't exist, it's simply a very small and often unknown part of the medium, I feel so many just go with gaming cause that's the easiest but don't really add anything and more casual viewers are just content with having a background voice and stop there.
