In fairness, she has never played it on stream. She played Tekken 3 and 7 a couple of times around her debut, but never touched Tag 2 despite mentioning on a few occasions that she used to go to locals tourneys for it.
Saa does nothing for me with her model, but I have mad respect to somebody who slummed it in the double capo tag crashing hellscape of Tag 2 to the point that they were attending locals.

Yeah they pretty much do. It's mostly maligned these days for its awful online and not the myriad other reasons why Tag 2 was funky. Though I think after 7 years of T7 people are looking back on it a little more fondly, probably softened thanks to hype for T8.
I would kill to have some chuubas play Tag 2 though; in all it's double capo, tag crashing glory.

That's an interesting question.
Naturally I'd assume people would gravitate to whatever kinda character archetypes they like - so Saruei would play the 2edgy types for example - but then again Cirno mains Kunimitsu in T7 and I never would've guessed that in a million years.

Coqui seems to be pretty into the idea of getting into SF6 when it comes out, but I couldn't guess who she'd play in it. There's not a BB Hood esque character in the core roster.
