Iirc from my tactical game days, the most efficient way to store a hex map in memory is to just have it as a flat array indexed bidimensionaly where you consider every other row is offset by half a cell to the right, and the adjacencies of each cell is both cells to the left and right, and the 4 cells above and below it.
I love these kind of graphics. If you only wanna use ASCII characters it'll probably look like this, if you don't mind using some unicode characters you could use these: ¯ to make your cells a bit more symmetrical.
