Now that you've mentioned it, given that we've kind of established /meat/ running on a meritocratic system, feels like that would be at odds with a gender segregation system (outside things that really require specific gender, like wentli likely has to match the gender of their gods, although personally I'm fine with mismatched gender as long as they otherwise look very similar). I'm not necessarily saying that every job should have the same amount of men and women working in that, but I think at least a noticeable portion of the soldiery (including the blessed ones) would likely be female.
As for Mai's blessing, personally my headcanon is that having the blessing and being able to endure the test (which "push one's body and mind to its absolute limit", presumably by testing the regeneration ability?), automatically allows you into the professional core. Of course, they still have to receive rigorous training to improve their martial prowess, but the value of the blessing itself, and the endurance to make use of it is, I think, significant enough to warrant their entry even if they aren't in shape (yet). Blessed ones as a source of meat would probably be those who fail the aforementioned test (so likely suffering from physiological and/or mental trauma) regardless of their gender.
That said, if we go for our mesoamerican inspiration (Norse seems to be somewhat more patriarchal) for what job would have more men or women, then the archetypical female job would be things that stay at home (or within city), including weaving, brewing, food preparation, healing, and crafting. Archetypical male job would be things that are more "outdoor", so things like farming, fishing (the act of harvesting itself - preparing nets and cooking the fish and such would be more female's job, and pearl diving might also be an exception given historical evidence elsewhere). Exceptions to the archetype is probably not too uncommon, and the clergy (and thus leadership) would likely be egalitarian, as are slaves on the other side of the decision-making totem pole. Some rituals might require specific gender to participate, like the deiphagy ritual mentioned above.
