I definitely feel this. I feel like I jump styles every few weeks.
As for shading and coloring. I mainly follow shitty anime tutorials but Devin Korwin's Creative Fundamentals is pretty good from what I've flipped through. (Link here https://mega.nz/folder/1axHEZba#A0VTgCTNFLp9iiDuAFJZFQ))
I think really good shading requires a good understanding of color theory.
I'm not gonna act like I'm an amazing artist. I actually hardly hardly color at all these days because I've mostly given up on it. But I hope you can find some value in these resources.

I think it's a good idea to color simply and not use a large color pallet. Every so often (probably once a month for me) go big. Use everything you've gotten comfortable using and push it to expend your technical knowledge.
