She won't fare well if she keeps flying like she does right now, but I think that the first 2v1 AC fight that she runs into is the "Assassinate Carla+Chatty Stick" mission near the end of the Liberation ending. She'll need to get past the Fairy before that fight can happen.

Pic related might give her some trouble, even if they're individually weaker than AC's. The lone Warrant Officer HC in "Eliminate the Enforcement squad" mission might give her lots of trouble. There's also a handful of fights against twin opponents where teammates show up, like the Spaceport fight where Rusty backs you up against two PCA officers.
