I can relate to Mori, generic fantasy and its overdone single-cell reproduction of derivative works is an affront to all that creative and interesting, but I think she just doesn't know where to look for dark fantasy settings, or systems, that would give her the vibe she wants. From her two TTRPGs, namely GUN and WOD, and her choice of games (Dark Souls) and anime (Made in Abyss), I think I can approximate what she wants in a "fantasy" (aka pre-modern) setting and there are a few books that do that. If I had the opportunity to tell her myself, I would;

Basically most OSR:
Lamentation of the Flame Princess (modules) pic related is from Veins of the Earth
Mork Borg
Dungeon Crawl Classics
etc
(Also ADnD settings like Ravenloft, Dark Sun and arguably Planescape but 2e is kinda archaic now)

Non-OSR:
Dungeon World (It's more a muted lowish fantasy, but it does the job)
Mouse Guard (you can go full Watership Down if you want to)
Shadow of the Demon Lor- NOPE, too many rules
Warhammer Fantasy, unironically

There's also a specific genre of music that captures the EXACT feel and if Mori gave those a listen I'm sure she'll be inspired and it's called Dungeon Synth:

Honestly maybe if we could nudge Mori to try out Vermintide she'll learn to enjoy the atmosphere and thus the setting.
