It's the same reason why people 'decide' to get invested in the romance of characters in a book or a novel. Or why people "pretend" to be in Skyrim by buying a VR headset and RPing a character.
It's just a fun emotional investment, albeit a rather intense one, like any other activity. Actual relationships require intimacy and special acknowledgement, exclusivity and reciprocity. None of these are present or expected in a parasocial relationship.
To put it in simple terms, a good GFE chuuba is like a celebrity crossed with a dating sim. Sure, a few schizos take it too seriously, but schizos exist everywhere in every sort of relationship, parasocial or not.
Not wanting them to interact with men is like not wanting plot holes in your favorite manga. It's less of a feeling of "being cucked" and more of a feeling of "your experience being ruined", or for some, something in the middle. It's just called the former colloquially.
