Dama= keeping your hand closed, choosing not to riichi when the chance comes, and winning via a ron or tsumo. Usually loses a han or 2 in the win depending on the type of hand, also can't use terminals if it's not tenpai available, I.E 3 dragon tiles or half outside hand
Riichi= openly declaring you need one tile to win, can't do anything else except ron, riichi, or kan if that comes up rarely.
tends to give much bigger wins depending on the hand

Doing the former makes you a sneaky cunt that no one likes to play against.
