Latent -> change the image more by adding detail
Other upscalers -> keep it basically the same but increase the resolution.

I don't know what denoising strength you're using with latent but often going too high creates mutants so you might want to try lowering it. I usually have denoising strength somewhere between 0.50-0.65 and the lower end of that is definitely safer
