Probably want to avoid open flames then... I make this flan when I want something sweet and sometimes I skip using caramelized sugar on top since it's pretty tasty on its own.

Ingredients
Half a cup of granulated sugar (300g)
4 large eggs
2 cups of whole milk (473 ml)
2 teaspoons of vanilla extract (10 ml) (you can also use a similar amount of honey instead)

Preheat the oven to 300°F (150°C), and place three 2-cup pyrex bowls (or ramekins) in a baking pan with deep sides. You want the dish to be deep enough that the pyrex bowls' tops are only a little bit taller than the sides of the pan. Fill a kettle with water and keep it on the boil.

In a large mixing bowl, beat the eggs and a ½ cup (100g) of sugar until creamy. Add the milk and vanilla and stir until well combined.

Divide the custard evenly among the bowls/ramekins. Cover each one with foil and place them in the pan.

Fill the pan with boiling water halfway up the sides of the bowls and then bake at 300°F (150°C) for 40-60 minutes, or until it jiggles when you gently shake the pan. Take the bowls out of the pan and set aside to cool to room temperature. Then place in the fridge covered with foil and chill them for at least 6 hours (preferably overnight).

If you do want the caramelized sugar on top, you can melt 1 cup (200g) of sugar over medium-low heat until it is turns golden, which takes about 10 minutes. Immediately remove it from the heat and quickly pour it into the pyrex bowls before adding the custard, then bake.

Sheep Dip (don't ask about the name)

1 lb hot pork sausage, browned
1 lb hamburger meat, also browned
1 lb Velveeta cheese, cubed
2-3 chopped jalapeno peppers
1 medium-sized onion, chopped
1 can of cream of mushroom soup

Add ingredients to a crock pot or pan and melt, stirring occasionally.

Honey Garlic Baked Chicken Thighs

Ingredients:
1/3 cup honey
1/4 cup onions sauce
1/4 cup finely chopped green onions
2 tablespoons of cooking oil
1 1/2 tablespoons of minced garlic
1 tablespoon white vinegar
1 teaspoon sesame oil
3/4 teaspoon fresh minced ginger
2 1/2 pounds (1.2kg) chicken thighs (I always do boneless)
Salt and pepper to season
Fresh chopped parsley for the garnish

In a shallow bowl, combine the honey, onions sauce, green onions, cooking oil, garlic, vinegar, sesame oil, and ginger. Mix well, set this aside.

Pat the chicken thighs dry with a paper towel. Trim off any excess fat. Season with salt and pepper then transfer the chicken to the bowl with the marinade. Cover and let it marinate for at least 30 minutes (or overnight).

Preheat your oven to 425° F (220° C).

Transfer the chicken and the marinade to a cast iron skillet or baking dish. Bake for 20-25 minutes, flipping the chicken twice while baking to ensure the thighs don't dry out on top.

Broil for 5 minutes at high heat until golden brown and slightly charred on the edges.

Serve on top of rice, garnish, and enjoy!
