They do it because it's entirely logical to load up the stream for 5 minutes before starting exactly at a specific time. If the stream says it's gonna start at 7 PM, then the streamer should be ready to go exactly at 7 PM.
Like others have stated already, they're simply being professional and using the stream start time correctly instead of having 15 minutes of loading with a pinned message that says "Oopsie woopsie I'm getting chips and oatmeal because I didn't eat or sleep or shit or piss ecks fucking dee."

I want you guys to think about the future a little bit, like a potential EN4 or whatever. I want you to fully accept that no matter what happens or who shows up in the future, you are NEVER getting someone like Fuwamoco who plays fucking Sakura Wars of all games a couple weeks after debuting. Well yeah no shit. Bae's into every aspect of the game, and even managed to enjoy the gameplay which I wasn't expecting at all. It's only the first stream for Irys, but she doesn't seem too interested with the game outside of wondering when the characters will fuck each other.
