It's not something that's completely provable but it's a well known fact among advertisers that showing people your product has sold in big numbers makes them more likely to think it's good and therefore buy it. The same principle applies here, if someone sees a stream with low numbers watching it they're likely to think either the content is bad or they're reading superchats etc. and would rather click on one with the higher viewcount.
