If the travelers are Sanallites then sure. Also while 6-8 people can run a bakery we're also not including the children too young to work. So it'd be more like 12-18 living here. Also there are Sanallites who will be working other jobs like blacksmithing, mining, and militia who will be living here.

Also I finally found the final draft of the bakery.

I'm going to have to say bakery floor plan is done. You can fudge around furnishings however you see fit. Most of the filled in squares are shelves, countertops, or tabletops
