In terms of what order, I'd say Diva is best for beginners. Even though the manga is pretty bad, I did find the Kirinji manga enlightening in the beginning. From there it's about assuming what you prefer the most. If you want chess match thinking, Ten is great, if you want super powered nonsense Mudazumo is fun, with Akagi and Saki in-between.

Try any EN streamers or check out /mjg/'s past broadcasts and streams. Sometimes from players and sometimes as spectators.
JP streamers are fine too, but they lack a lot of impact most times.
You have vtubers like Senba Crow who plays into this iron wall of emotion who can let a double yakuman slip out of her fingers as if it was just dropping a penny out of her hand at the toll booth.
Then there are vtubers like Nina, who can contain herself against some bad beats but whines when she gets cucked too hard and has crisis of faith when she falls hard. So much she gets mahjong coaches.
M-League is where professionals play too, but again, they're very professional and don't let you in on how they feel in the middle of a match.
>Movies
On /mjg/ repo there are movies you can watch that do play up the emotion and themes. Sakurai movies are good fun.
There's also the Ten adaptation.
