Oh that's barely touching the surface, there are tons. This page lists some of the latest forks: https://doomwiki.org/wiki/Comparison_of_source_ports
They all clock in at the same speed but what mostly matters is the compatibility levels and which compatibility levels a given source port supports. Complevels in short are a list of engine quirks that have slightly been iterated over time but you really don't need to care about it since it mostly matters for recording demo files and purists.

GZDoom I'll say is a special category of it's own because of its scripting language whereas most other sourceports are stuck with hardcoded stuff of yesteryears. Every "Whoah I can't believe this <Indie Game> is actually DOOM!?" is GZDoom. It's more of a general game engine evolved out of Doom that still natively runs wad files.
GZDoom also brings about the few exception integrity issues which DO alter gameplay in non-insignificant ways such as monsters not being infinitely tall and smoother collisions.
