the part the meme pic skips over is that the owl is not 2 shapes, it is hundreds of shapes, down to the individual fibers on the feathers. and the artist had a concept of every single one of those shapes, how they fit together, and how the light hits them. obviously they've studied owls a lot, but that is secondary to the foundation they built on how to portray basic shapes
the equivalent for a human figure would be looking at a gesture sketch vs a fully rendered figure, skipping all the steps in the middle. break it down, it's all shapes. yeah, you have to know anatomy to draw from imagination, and a bunch of other stuff, but "knowing" the shaped of the deltoid is entirely different from "knowing" how to portray that shape at a different orientation
