The texture is a big part of it for sure, as well as the fact that the quality of tomatoes varies a lot like >>21864833 said, but more than that the flavor of raw unripe tomatoes is gross and vastly different than the flavor of ripe cooked tomatoes. The tomatoes they have out in the store produce section are not actually ripe even if they are red because they are exposed to ethylene gas which turns them red to give the appearance of ripeness before they're actually ripe. Actual ripe tomatoes are delicious even raw but are too soft and mushy to be transported whole for display like, so instead they are peeled and canned and they can be found in the cans in the canned goods aisle usually.

I feel the same way. But when mushrooms are cooked enough and had most of their water evaporated out since mushrooms are like 90% water then they're friggin good eats.
