I've never played MC, but one project I've always wanted to do but kept stalling on in terraria was building a huge wizard tower base. It's a bit difficult in 2D if you don't want to just make it a bunch of platforms and empty space, but maybe in 3D it'd be better. Huge staircases and rooms full of books, stuffy crafting rooms and storage spaces, balconies with small farms, maybe some imprisoned villagers and mobs. Somewhere at the top of a mountain with a trapped door that drops you into a pit if you take the front entrace rather than the hidden door.
