If you want a definition, I would say hags are defined by the following according to typical anime-style tropes:
tall, breast sag + larger breasts (aging / slight weight gain), a bit of a tummy (varies but is present even in non-architecture), elongated face, smaller eyes and adult/motherly clothes.
