Based on a single video, we can assume that the entire fruit organ system is vastly different of the system we find in our own bodies and animals. For one, we have a tomato that remains alive and able to talk and see after getting blended (https://youtu.be/CjAsJfz9dBc).). By my guess, their pulp is a rearrangeable organ/cell. An individual pulp can function as any "organ tissue" a fruit needs and this includes their brain, lungs and eyes. Since we can see that knifed fruits are "dead", we can deduce that their pulp needs to be in contact with each other in order to survive. Blending fruit really quickly doesn't separate one pulp unit from the rest but knifing does. The scream you hear when a fruit gets knifed is probably their pulp screaming and frantically trying to reconnect with the other half.
