More res = more time/processing power to generate a single image. As someone who is very casually into AI art but isn't very good at it yet, one of the easiest ways to eventually get something decent is just to make an assload of images and let RNG eventually give you something good. Dropping the resolution down to something tiny makes that process a hell of a lot faster, so I an get what I want sooner. I'm not making my own wallpapers generally speaking, so I don't really have a need for big pictures.

I'd pop into the AI thread to ask, I haven't fiddled with it much myself. The only AI art I do is just to visualize Holos in different outfits I like, I don't do much pairing stuff.
