On top of what was already mentioned, the very first visual representation of Neuro, back when she was just an osubot without a vtuber model, was a girl in the anteater hat (picrel). Also, the old sub notification message was an anteater gif and there was a "cute cam" that was a slideshow of anteater photos. You can see all of these and the anti-ban anteater banner in this video (sub notification at 0:43).

The sub notification kept being a thing for a while even after Neuro became a vtuber.
Also also, the old Neurocord server image was an anteater image as well (can't provide proof of that one, maybe someone else has a screencap) and it had an "anteater pics" channel that Vedal occasionally posted in (the channel is currently archived).
