I love pasta. I love it with meat sauce. I love it with vegetables. I love it with the cheese. But there’s just one type that I don’t really like. The kind that’s just tossed into a boiling pot of water. But I don’t have a name for it. And I’m not sure if I ever will. I’ll just refer to it as “the black pasta” Now I know you’re wondering what black pasta is. I know. It’s pasta that’s tossed into a pot of boiling water. Doesn’t that sound like a standard pasta? I wouldn’t say no, but most Italians don’t see it that way.
To them, black pasta is a different beast altogether. It’s hard to explain, but you just know it when you see it. When we lived in Rome we saw it everywhere. Like at Trattoria San Filippo on the Via Nazionale. On a Sunday we would always ask for the San Filippo and then ask to be served pasta and meat sauce, just the way it was being served. And we’d get the black pasta tossed with the brown sauce. And then we’d have the meaty, meaty stuff.
The San Filippo was the best and I don’t just say that because it was in Rome. And I don’t just say that because it was a chain. I say that because when we ate there, we knew that everything was of the best quality. The truffle oil. The olive oil. The salt. The pasta. Everything. That’s the feeling you get when you eat at San Filippo.
After that experience, I wanted to start looking for black pasta as soon as I could. My quest led me to a wonderful store called Pasta del Giglio in Boston. It’s the best pasta store I’ve ever seen. Everything from fresh noodles to handmade pasta to a vast array of sauces, even truffles! It’s heaven. I go there all the time.
Black pasta is hard to find in the US. But it’s not hard to find it in Italy. I’ve read a bit about black pasta, but I’ve not tasted it. I’m curious. And so the hunt is on for some. I have a plan in mind. I plan to make black pasta. At some point.
I know I’m going to be tempted to add Parmesan to my dough. But the best thing about black pasta is that you don’t have to. That’s right, it’s Parmesan optional. You can just use good quality salt and olive oil. And the best thing about that is that you can make it a whole bunch of ways.
So here’s my idea. I’ll start with a classic dish, black pasta carbonara. And from there, I’ll venture into other ways to eat black pasta. You can make it with all kinds of toppings. You can use black squid ink instead of regular pasta water. And the possibilities are endless. Enjoy your dinner. And eat your pasta. In it’s black and white
