I have limited knowledge of this since I'm not an artist, but I can make an educated guess. There's more subsurface scattering on white people, because there's less melanin. It travels through blood vessels, hair follicles, etc. I had to manually color the original "human" Randon like picrel to get it to look even a little bit natural. Just doing a color replace or hue/saturation looked completely wrong no matter what I did. The dark green of orcs is closer to brown, and is only one color, so the shift is less dramatic, and more natural.
