The water thing is pretty mundane, it’s similar to ex-fast food workers telling you not to order X thing from Y restaurant. The idea is that airlines are really lazy with cleaning their coffee pots and water jugs, so the tap water server for tea and coffee may be less than clean. It doesn’t bother me personally, I always order tea on a plane.
