While Johnny Appleseed actually was a real guy, the mythos of him spread around America well enough to establish the character as a folk hero.
Paul Bunyan is totally different folk hero, one more associated with American expansionism and the logging industry in the midwest and Canada. It is my personal headcanon that he is a kaiju representing the affects that the logging industry really did on the land at the time when Americans were settling the Great Lakes region.
